You are collected from your accommodation by air-conditioned coach — about half an hour each way — and dropped at the old town harbour in Puerto del Carmen. Departure is around 18:00 in the summer season and around 16:00 in winter, timed so the return leg coincides with sunset.

Once out of the harbour the boat runs the south coast looking for bottlenose and Atlantic spotted dolphins, with pilot whales a regular possibility and flying fish a common bonus. The crew give live commentary on the cetaceans and on the volcanic coastline you are passing. As with every licensed operator here, the boat must hold 60 metres off any pod and stop its propellers within 100 metres — nothing on the island is allowed to do more than that.

The last stretch is the sunset itself, watched from the deck with a glass of sparkling wine or juice and local pastries handed round. Bring warmer clothing than the temperature on land suggests. The operator flags this specifically: the thermal sensation out on the water is noticeably colder, even in high summer, and a fast boat generates its own wind chill.
